Fairmont Tokyo is seeking an experienced and innovative Executive Chef to lead the culinary team at our luxury property. This role demands a visionary leader with exceptional culinary expertise and a passion for delivering unforgettable dining experiences. The Executive Chef will oversee all culinary operations, ensuring the highest standards of quality, creativity, and efficiency across all dining outlets, banquets, and events.
Key Responsibilities:
Leadership and Management:
- Lead and inspire a diverse culinary team, fostering a culture of excellence, creativity, and collaboration.
- Recruit, train, mentor, and develop team members to achieve their full potential.
- Oversee scheduling, performance management, and development plans for all culinary staff.
Culinary Excellence:
- Develop and execute innovative menus that align with Fairmont’s brand and cater to diverse guest preferences.
- Ensure consistency and quality in all culinary offerings, maintaining a balance between traditional Japanese cuisine and international culinary trends.
- Maintain an emphasis on sustainable sourcing and seasonal ingredients.
Operational Oversight:
- Oversee daily kitchen operations, ensuring adherence to budget, cost control, and labor efficiency.
- Monitor food production and service, maintaining compliance with health, safety, and hygiene standards.
- Collaborate with the Food & Beverage team to ensure seamless integration of culinary and service operations.
Guest Engagement:
- Engage with guests to receive feedback and incorporate their preferences into menu offerings.
- Create unique and memorable culinary experiences to enhance guest satisfaction.
Financial Management:
- Develop and manage the culinary department budget, including food cost, labor, and operational expenses.
- Analyze and optimize kitchen performance metrics to achieve financial goals.
Event and Banquet Coordination:
- Collaborate with event planners and the sales team to design and execute exceptional banquet and catering menus.
- Ensure flawless culinary execution for all special events and private dining experiences.
Qualifications and Skills:
- Proven experience as an Executive Chef or similar leadership role in a luxury hotel or fine-dining establishment.
- Expertise in Japanese cuisine with knowledge of international culinary techniques and trends.
- Strong leadership, organizational, and communication skills.
- Ability to manage high-pressure situations and multitask effectively.
- Fluency in English; Japanese language skills are a significant asset.
- Culinary degree or equivalent professional training.
